80 | g | FINUM - ACTIVE LIEVITO MADRE |
24 | g | Salt |
300 | g | Sugar |
200 | g | Eggs (cat.A) |
240 | g | Butter |
Preparation
KNEADING TIME* 4 min. first speed + 7 min. second speed or until the dough is smooth and dry. Add the
butter.
DOUGH TEMP 25-28 °C
RESTING TIME 20 min. at 30 °C
SHAPING Divide the dough into 300 g pieces. Divide each piece into 3 then braid.
PROOFING approx. 2 h at 30 °C with 80% humidity or until the volume has doubled.
BAKING* 170 °C fan oven for approx. 16 min. Final 5 min. with open valve.
200 °C static oven for approx. 18 min. Final 5 min. with open valve.
