Serves 4

For the Bun
200 g Soft wheat flour no. 4 type 00
50 g Khorasan Kamut ® Bio wheat flour
25 g ADAM - lievito madre natural yeast
75 ml water
100 ml milk
5 g salt
10 g butter
10 ml milk for brushing
q.s. Sesame seeds, black & white, for decoration
400 g minced beef
1 egg
q.s. salt
q.s. pepper
20 ml sunflower oil
40 ml ketchup or other sauce, as desired
4 salad leaves
4 cheese slices (e.g Gouda)
2 tomatoes, sliced


  1. Melt the butter under a moderate heat. Mix the soft wheat flour and the Kamut flour, together with the Lievito Madre, milk and water for approx. 1 minute. Add the melted butter and salt and knead until a very smooth dough is obtained. Cover and set aside for approx. 2 hours at room temperature. 
  2. Preheat the oven (static: 190°C, fan: 170°C). Divide the dough into four equal pieces and shape into four buns. Brush the surface with a little milk and sprinkle some sesame seeds on top. Bake for approx. 20 minutes until golden. 
  3. In the meantime, mix the minced beef with the egg and season with salt and pepper. Shape four burgers and gently fry in the sunflower oil. 
  4. Allow the buns to cool slightly then slice in half. Spread some ketchup or other sauce on to the bun and fill with salad leaves and the beef burger. Lay a slice of cheese over the warm burger and slices of tomato. Cover with the other half of the bun.
