| 200 | g | Soft wheat flour no. 4 type 00 |
| 50 | g | Khorasan Kamut ® Bio wheat flour |
| 25 | g | ADAM - lievito madre natural yeast |
| 75 | ml | water |
| 100 | ml | milk |
| 5 | g | salt |
| 10 | g | butter |
| 10 | ml | milk for brushing |
| q.s. | Sesame seeds, black & white, for decoration | |
| FOR THE BEEF BURGER | ||
| 400 | g | minced beef |
| 1 | egg | |
| q.s. | salt | |
| q.s. | pepper | |
| 20 | ml | sunflower oil |
| 40 | ml | ketchup or other sauce, as desired |
| 4 | salad leaves | |
| 4 | cheese slices (e.g Gouda) | |
| 2 | tomatoes, sliced |
Preparation
- Melt the butter under a moderate heat. Mix the soft wheat flour and the Kamut flour, together with the Lievito Madre, milk and water for approx. 1 minute. Add the melted butter and salt and knead until a very smooth dough is obtained. Cover and set aside for approx. 2 hours at room temperature.
- Preheat the oven (static: 190°C, fan: 170°C). Divide the dough into four equal pieces and shape into four buns. Brush the surface with a little milk and sprinkle some sesame seeds on top. Bake for approx. 20 minutes until golden.
- In the meantime, mix the minced beef with the egg and season with salt and pepper. Shape four burgers and gently fry in the sunflower oil.
- Allow the buns to cool slightly then slice in half. Spread some ketchup or other sauce on to the bun and fill with salad leaves and the beef burger. Lay a slice of cheese over the warm burger and slices of tomato. Cover with the other half of the bun.
