Carnival Muffins with Chocolate Cream

Ingredients for 12 muffins

Muffin Batter
180 g Soft butter
90 g Sugar
1 Egg
1 Egg yolk
90 g Dark chocolate, VALRHONA 66%
220 g Wheat flour type 00 nr. 2 bio
1 pinch Salt
1 tablespoons Baking powder
50 ml Milk
Chocolate Ganache
250 g Dark chocolate, VALRHONA 66%
150 g Cream


Preparation for the Muffins: 

  1. Roughly chop dark chocolate and melt it in a hot water bath. Beat butter with sugar until creamy. Stir in egg and egg yolk. Mix flour, salt, and baking powder. Add the flour mixture to the butter-sugar mixture along with milk and mix well. Quickly and vigorously fold in the melted chocolate.
  2. Fill muffin cups with the batter.
  3. Bake in a preheated oven at 190°C for about 15 minutes. Let them cool on a rack.

Preparation for the Chocolate Cream:
  1.  For the chocolate ganache, roughly chop the chocolate and place it in a heat-resistant bowl.
  2. Heat the cream in a small saucepan. Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes, then stir into a smooth cream. Allow it to cool, then cover and refrigerate for about 2 hours.
  3. Whip the ganache with a hand mixer or kitchen machine for 4-5 minutes until light and fluffy.
  4. Transfer it to a piping bag with a large star tip and use it to decorate the carnival muffins.
  5. Optionally, decorate with Smarties and chocolate sprinkles according to your preference.
