Ingredients for 8-10 brioches

250 g wheat flour nr. 6
25 g EVA - lievito madre organic
125 ml lukewarm milk
1 package vanilla sugar
3 tablespoons sugar
2 egg yolks
125 g butter at room temperature
110 g chocolate drops


  1. Place the flour in a bowl, add the lievito madre, the milk, in which you have first dissolved the sugar and vanilla sugar, and finally the egg yolks. Knead until the mixture is smooth. Incorporate the butter a little at a time, mixing it well into the mixture. Finally add the chocolate chips. Cover with a cloth and leave to rest in a warm place (approx. 27 °C) for approx. 10/12 hours. 
  2. From the dough, cut 8 ball-shaped pieces. Place them on a baking tray with baking paper and leave to rise covered (approx. 27°C) for a further approx. 60 min. until doubled in volume. 
  3. Bake in a static oven preheated to 180°C (160°C ventilated oven) for approx. 15-20 min. 

TIP: The lievito madre natural yeast loves warmth, so we recommend a rising temperature of 26-28°C.
