Ingredients

Ingredients for 1 bread

Gel
5 g psyllium husks
100 g water
Pre-dough (autolysis)
300 g La Speziata - wheat flour type 2
150 g wheat flour no. 4
50 g wholemeal rye flour
260 g water (40°C)
Dough
1 x Gel
1 x Pre-dough
40 g ADAM - lievito madre natural yeast
1 cc fenugreek (trigonella)
10 g salt
20 g butter (soft)
q.s. poppy seeds

Preparation

  1. Gel: Mix the psyllium husks with water and let them rest for 10 min. 
  2. Pre-dough (autolysis): Coarsely mix all ingredients and let ingredients and leave to rest for 30 min. 
  3. Dough: Put the pre-dough, gel, sourdough and trigonella in the bowl of a planetary mixer and knead for 5 min. on first speed, then add the salt and butter and knead for another 2 min. knead for a further 2 min. on second speed. Cover the dough and let it rise at room temperature for 30 min. room temperature for 30 min. Take the dough and form it into a loaf. a loaf. With a brush, moisten one side of the loaf and loaf and roll it in the poppy seeds. 
  4. Place the loaf into a floured leavening basket, with the seeded side down and leave to rise for approx. 30 min. Preheat the oven to 250°C with the baking tray. 
  5. Take the baking tray out of the oven and tip the loaf onto it. Cut into it and steam it in the oven. After 10 min., lower temperature from 250°C to 210°C and bake for a further 30 min. min.

*Steam can be generated in the home oven in various ways: 
- if the oven provides for it, use the steam mode;
- pouring water on the boiling lava stone
- placing a tray or bowl of water in the bottom of the oven; 
- by pouring a cup of water on the bottom of the hot oven; by spraying water into the oven with a spray bottle.
Fibra di psyllium
I semi di psillio sono i frutti di un'antica pianta medicinale. I loro gusci contengono le cosiddette fibre solubili, che sono particolarmente note per il loro effetto regolatore sul tratto gastrointestinale e vengono utilizzate sia in caso di diarrea che di costipazione. Le bucce dei semi di psillio possono assorbire 50 volte più acqua rispetto al loro peso! Si possono mettere nel muesli, nell'insalata, nei frullati o possono essere assunti in modo classico semplicemente mescolati con acqua - meglio sempre con 1-2 bicchieri d'acqua aggiuntivi dopo.
