for 16 olive breadsticks
FOR THE DOUGH | ||
500 | g | Wheat flour type 00 nr. 2 bio |
25 | g | ADAM - lievito madre natural yeast with dry yeast |
380 | g | lukewarm water |
8 | g | salt |
30 | g | olive oil |
150 | g | pitted green olives |
q.s. | Hartweizengrieß fein |
Preparation
Put the flour in a bowl together with the ADAM lievito madre natural yeast and lukewarm water. Mix with a spoon or your hands. Add the salt and extra virgin olive oil and continue kneading with a spoon or your hands until the dough becomes smooth but rather sticky. At this point, add the drained green olives, briefly knead the dough so they are evenly distributed, and let rest covered for 30 minutes.
- After the first 30 minutes of rest, perform a series of folds directly in the bowl: take one edge of the dough with wet hands or a spatula, stretch it upward, and fold it back toward the center. Rotate the bowl 90 degrees and repeat the process until you complete one full round.
- Cover the dough and let it rise for 90 minutes, folding it once every 30 minutes. In total, make 4 rounds of folds, and after the last one, let the dough rise for another 30 minutes.
- Dust the work surface generously with semolina and slide the dough onto it. Dust the top of the dough with semolina as well, and by stretching or gently pressing with your fingertips, form a rectangle about 25 × 30 cm in size. Cut it in half lengthwise with a dough scraper or a sharp, floured knife, then cut each strip into 8 breadsticks.
- Transfer the breadsticks to a baking tray lined with parchment paper, spacing them slightly apart, and let rise covered for another 30 minutes. Meanwhile, preheat the oven to 230°C (static).
- When the oven is hot, pour half a glass of water onto the bottom to create steam and bake the olive breadsticks for about 20 minutes, until golden brown. Halfway through baking, open the oven to re-lease the steam. Remove the olive breadsticks from the oven and let cool.
