Ingredients

makes approx. 20 grissini (2 trays)

1 tablespoons ADAM - lievito madre natural yeast
270 g Khorasan Kamut ® Bio wheat flour
5 g salt
170 ml water
100 g pesto (homemade or readymade)

Preparation

  1. Mix the Lievito Madre natural yeast together with the kamut flour and water for approx. one minute. Add the salt and knead until a smooth and uniform dough is obtained. Cover and set aside to rest for approx. 4 hours at room temperature. 
  2. Divide the dough in half and roll out thinly. Spread one half with pesto, keeping 1 tbls. of pesto aside. Lay the other half on top and join along the edges. Cut into strips about 1cm wide and place on a baking tray lined with baking paper. Spread over the remaining pesto.
  3. Bake the breadsticks for approx. 10 mins. in a preheated oven (static: 200°C, fan: 180°C) until crunchy and golden.
