- Knead all ingredients in the mixer until a homogeneous dough is obtained (about 5 minutes).
- Roll out the dough thinly on a floured work surface (rice or cornflour) and cut into any shape.
For the pasta machine, press the dough into flat pieces, flour both sides and turn in the pasta machine.
- Cook the tagliatelle in plenty of salted water with a little oil for about 3-5 minutes.
TIP: you can also make lasagne sheets with the dough.
