| 500 | g | Baking mix pizza, bread, focaccia gluten free |
| 500 | ml | water |
| 8 | g | salt |
| 13 | g | fresh yeast |
| 1 | cucch.ino | honey |
| 1 | cucch.ino | turmeric |
| 30 | g | oil |
| q.s. | coarsely chopped walnuts |
Preparation
- Dissolve the yeast together with the honey in lukewarm water and let it rest for a few minutes.
- In a large bowl or stand mixer, combine the flour, turmeric and salt. Gradually add the yeast mixture and start kneading. When the dough begins to come together, add the oil and continue kneading until smooth and elastic.
- Add the coarsely chopped walnuts and knead briefly to distribute them evenly. Divide the dough into two pieces, lightly oil your hands and shape each piece as desired (loaf, braid or small bread). Place the dough in suitable moulds to help it keep its shape while rising.
- Cover with cling film and let rise for about 60 minutes in the switched-off oven with the light on, or in a warm, draft-free place.
- After rising, gently turn the dough onto a baking tray lined with parchment paper and bake in a fan oven at 220 °C (428 °F) for about 60 minutes.
- Once baked, leave the bread to rest in the switched-off oven with the door slightly open for another 5 minutes.
Tip: This turmeric bread pairs perfectly with cheese, soups or spiced dishes. It stays soft for several days if wrapped in a cotton cloth.
