Ingredients

for 10 Venostini buns

For the buns:
500 g Mix Venostini bread
290 g lukewarm water
For the filling:
10 turkey steaks
q.s. sweet paprika
q.s. pepper
q.s. salt
q.s. vegetable oil
20 slices speck (smoked cured ham)
10 lettuce leaves
2 tomatoes
10 slices melting cheese
q.s. mustard
q.s. ketchup

Preparation

  1. To prepare the Tyrolean burgers, place the Venostini mix in the bowl of a stand mixer, add the lukewarm water and knead for approx. 10 minutes until you obtain a smooth, fairly soft dough. Cover and leave to rise for about 1 hour. 
  2. Transfer the dough onto a well-floured sheet of baking paper, dust the top with flour, and divide into 10 equal pieces using a dough cutter. 
  3. With floured hands, shape each piece into a bun approx. 12 cm in diameter. Place them on a baking tray lined with baking paper and cover. Leave to rest for another hour. 
  4. Meanwhile, preheat the oven to 220°C (conventional setting). Place the buns in the oven and immediately reduce the temperature to 180°C. Bake for 25–30 minutes, until golden. 
  5. Remove from the oven and allow to cool. 
  6. In the meantime, prepare the filling. Season the turkey steaks with paprika, salt, pepper, and a drizzle of oil. Cook them on both sides in a pan or on a grill. 
  7. Cut the Speck slices in half and crisp them up either in a pan or in the microwave: arrange them side by side and microwave on full power for about 1 minute and 30 seconds. 
  8. Wash and dry the lettuce. Wash and slice the tomatoes. 
  9. Cut the Venostini buns in half and lightly toast the cut side in a pan. 
  10. To assemble the burgers, take the bottom half of each bun and layer with: mustard, half a lettuce leaf, 1–2 slices of tomato, half a turkey steak, 1–2 slices of crispy Speck, one slice of cheese, ketch-up, the other half of the lettuce, 1–2 more tomato slices, the remaining half of the turkey steak, and 1–2 more slices of crispy Speck. 
  11. Finish with the top half of the bun, secure with a skewer or knife, and serve immediately.
