Preparation
- To prepare the gua bao, put the Pizza mix, sugar and lukewarm water into the bowl of a stand mixer. Knead until a homogeneous dough is obtained, then gradually pour in the cream and continue kneading until the dough is smooth and elastic.
- Shape the dough into a ball, place it in a bowl, cover and leave to rise in a warm place until doubled in size, about 1 hour and 30 minutes.
- Take the risen dough and divide it into 12 equal pieces. Shape each piece into a ball, then roll it out on a lightly floured work surface into an oval shape (approx. 15 x 10 cm).
- Place a small piece of parchment paper (approx. 7 x 5 cm) on one half of the oval and fold the other half over the paper. This will prevent the gua bao from sticking together during cooking. Place the gua bao on parchment paper and repeat with the remaining dough, then cover and let rise for another 30 minutes.
- If you have a bamboo steamer, use it to cook the gua bao; otherwise, heat a pot with a steaming basket and some water at the bottom. When the water boils, place the gua bao with their parchment paper in the steamer basket, leaving some space between them. Put two or three in the lower basket and the same in the upper one, depending on the size of your pot.
- Close the lid and steam over medium-low heat for about 12 minutes, until they are nicely puffed up and no longer sticky to the touch.
- Remove the gua bao from the steamer and place them on parchment paper. Before steaming another batch, check the water level in the pot, add more if necessary and bring it back to a boil before continuing.
- Fill the gua bao with cream cheese, ham and cucumber slices, and enjoy.
