Ingredients for about 15 swirls
For the dough | ||
500 | g | Soft wheat flour no. 4 type 00 |
25 | g | ADAM - lievito madre natural yeast with dry yeast |
8 | g | oregano |
300 | g | lukewarm water |
10 | g | salt |
15 | g | olive oil |
For the filling | ||
150 | g | tomato sauce |
250 | g | pizza mozzarella |
70 | g | olives, sliced |
120 | g | cooked ham, cut into strips |
q.s. | fresh basil, to taste |
Preparation
- To prepare the pizza swirls, place the flour, lievito madre natural yeast, oregano, and water into the bowl of a stand mixer. Start the mixer and add the salt. Knead until a smooth dough forms, then slowly pour in the olive oil and continue kneading until the dough is well developed, meaning it detaches from the sides and bottom of the bowl and wraps around the dough hook. Shape the dough into a ball, place it back into the bowl, cover, and let it rise in a warm place until doubled in size (about 2 hours and 30 minutes).
- Once the dough has doubled in volume, roll it out on a lightly floured surface into a rectangle of about 45 × 30 cm. Spread the tomato sauce evenly over the dough. Sprinkle with mozzarella (optionally only over part of the dough), then top one third with the ham, one third with some fresh basil leaves, and one third with the olives. Of course, you can vary the filling according to your taste.
- Roll up the dough and cut the roll into about 15 slices, each 3 cm thick. To do this, you can use a nylon thread: slide it under the roll, cross the ends over the top, and pull tight to “cut” a slice. This way the swirls will be neat and round. Alternatively, use a very sharp knife.
- Arrange the pizza swirls on a baking tray lined with parchment paper, cut side facing up. Cover and let rise for another 30 minutes in a warm place, away from drafts.
- Meanwhile, preheat the oven to 180 °C (static).
- Bake for about 25 minutes at 180 °C, until golden brown. Remove from the oven and enjoy warm or cold. Pizza swirls are also delicious cold, making them perfect to pack for school or as a snack.
