| 120 | g | Whole spelt flour |
| 120 | g | White spelt flour |
| 60 | g | Oat flakes |
| 2 | teaspoon | baking powder |
| 1 | teaspoon | baking soda |
| 1 | egg | |
| 50 | g | cane sugar |
| 100 | ml | vegetable oil |
| 75 | g | maple syrup |
| 200 | g | natural yogurt |
| 100 | ml | milk |
| For the crumble | ||
| 60 | g | Oat flakes |
| 3 | tablespoons | maple syrup |
Preparation
- Preheat the oven to 180°C and line a muffin tin with paper liners.
- In a bowl, mix together the flours, oat flakes, baking powder, and baking soda. Lightly beat the egg. Add cane sugar, oil, maple syrup, yogurt, and milk, mix well. Stir the liquid ingredients into the flour mixture with a spoon until no flour traces are visible. Fill the 12 muffin cups with the batter and set aside.
- In a bowl, mix oat flakes and maple syrup for the crumble and distribute it over the batter.
- Bake the muffins at 180°C for about 20 minutes.
