Ingredients

For 21 pcs

50 g FINUM – Lievito madre
1000 g Soft wheat flour type 0 orange
500 g water
150 g sugar
100 g eggs
20 g salt
100 g butter

Preparation

KNEADING TIME Knead for 5 minutes on low speed, then for 7 minutes on medium speed, or until the dough is smooth and dry. 

SHAPING Divide the dough into 90 g pieces, shape, and place them on trays.

LEAVENING Let the dough rise for 60 min. at 30 °C (86 °F), covered with a cloth, until tripled in volume. Brush with egg halfway.

BAKING Brush with egg and seeds. Bake at 170°C (338 °F) with vapour for approx. 15 min. Final 5 min. with open valve.
