Ingredients

Ingredients for 16 buns

500 g mix for chocolate buns
175 g cold whole milk
1 egg (50 g)
15 g honey
50 g soft butter, cut into cubes
75 g chocolate chips
q.s. milk for brushing

Preparation

  1. Place the mix in the bowl of a stand mixer fitted with a dough hook. Add the cold milk, egg, and honey. Knead on medium speed for about 12 minutes. Add the softened butter cubes all at once and continue kneading for another 3 minutes, until the dough becomes smooth and elastic. Add the chocolate chips and mix on low speed just until evenly incorporated.
  2. Transfer the dough to a lightly greased bowl. Cover with plastic wrap and let rise at room temperature for 1 hour, or until slightly puffy.
  3. Divide the dough into 16 equal portions (about 50 g each). Shape each portion into a smooth ball. Arrange the buns on a baking tray lined with parchment paper. Cover loosely with plastic wrap and let rise for another 1 hour.
  4. Brush the tops gently with whole milk.
  5. Bake in a preheated conventional oven at 180°C for about 15 minutes, placing the tray on the second rack from the bottom.
  6. Remove from the oven and allow to cool completely on a wire rack before serving.

Note: It is recommended to use cold milk straight from the refrigerator for the dough
