For 1 baguette (approx. 700 g)

500 g LA SPEZIATA - Wheat flour type 2
370 ml water
50 g EVA - Lievito madre natural yeast bio
10 g salt
q.s. thyme, rosemary, oregano
q.s. herb butter


  1. Mix the soft wheat flour with the water and Lievito Madre. Add the salt and chopped herbs. Knead the ingredients together for approx. 5 minutes until a smooth and uniform dough is obtained. Cover and set aside for approx. 5 hours at room temperature.
  2.  After the resting time has elapsed, gently work the dough and shape into a baguette form. Set aside for a further 30 minutes. Preheat the oven (static: 220°C, fan: 200°C).
  3.  Bake the baguette in the oven for approx.15-20 minutes until the surface is crunchy and golden. Remove from the oven and slice whilst it is still warm. Fill with a little herb butter and other herbs.
