Ingredients
Ingredients for 4 crêpes
| For the crêpes | ||
| 1 | egg | |
| 140 | ml | milk |
| 1 | pinch | salt |
| 1 | teaspoon | granulated sugar |
| 75 | g | Oat flakes flour |
| For the filling | ||
| 2 | Golden apples | |
| 1 | teaspoon | cornstarch |
| 1 | teaspoon | cinnamon |
| 2 | tablespoons | granulated sugar |
| 1 | teaspoon | coconut sugar |
| 2 | teaspoon | lemon juice |
Preparation
- Prepare the crêpe batter by whisking together all the ingredients until smooth.
- Cook the batter in a non-stick pan over medium heat, making thin crêpes. With these quantities, you should obtain 4–5 crêpes.
- In a separate saucepan, combine the diced apples with cinnamon, sugars, cornstarch, and lemon juice. Stir with a spoon, then add a splash of water (about half a glass).
- Cook over low heat for about 10 minutes, or until the apples reach your desired consistency.
- Fill the crêpes with the apple mixture and roll them up, or fold them if preferred.
- For extra flavor, spoon the syrup formed during cooking over the crêpes to decorate and enhance the taste.
