Ingredients
6 pcs.
| 400 | g | Weizenmehl Nr. 4 Type 0 Bio |
| 100 | g | oatmeal flour |
| 50 | g | fine oat flakes |
| 350 | g | lukewarm water |
| 40 | g | ADAM - lievito madre natural yeast |
| 10 | g | salt |
Preparation
- Knead all ingredients with a stand mixer until you obtain a smooth and elastic dough (approx. 12 minutes). Add the salt 2 minutes before the end of the kneading process. Cover with a cloth and let rise in a warm place for about 30 minutes.
- Divide the dough into six portions and shape them as desired on a floured work surface.
- Lightly moisten the surface of the dough with a little water and roll it in the oats. Line a baking tray with baking paper and place the loaves on it. Cover and let rest in a warm place for about 45 minutes, until the dough has doubled in volume.
- Place the baking tray on the middle rack of the oven and bake at 200°C (390°F). After 5 minutes, reduce the temperature to 180°C (355°F) and bake for another approx. 25 minutes until done.
