Ingredients
for 8 pizzas
| 1000 | g | Mix for pizza gluten-free |
| 800 | g | water |
| 35 | g | fresh yeast |
| 30 | g | salt |
| 80 | g | extra virgin olive oil |
| 30 | g | sugar |
Preparation
KNEADING* Knead all the ingredients in a mixer at medium-high speed for 6 mins.
SHAPING Roll out the dough to 3 mm and form discs of 28 diameter.
PROOFING Leave to rise at 32-33 °C ( 89.6–91.4 °F )for 60 min or until the volume is doubled. Spread with tomato sauce and sprinkle with chopped mozzarella or top as desired.
BAKING Bake in a static oven at 300 °C ( 572 °F) for 3 min.
