| 270 | g | Spelt flour Regiograno bio |
| 8 | g | baking powder |
| 2 | g | salt |
| 3 | eggs | |
| 75 | g | sugar |
| 250 | g | ricotta |
| 100 | g | butter, melted |
| 280 | g | milk |
| FOR SERVING | ||
| q.s. | strawberries | |
| q.s. | powdered sugar | |
| q.s. | agave syrup or honey | |
| q.s. | yogurt or whipped cream |
Preparation
- Combine flour, baking powder, and salt. Separate eggs and whip egg whites until stiff.
- Beat egg yolks with sugar until creamy, add ricotta and mix.
- Add flour and milk in two steps, fold in egg whites and melted butter, then let rest for 30 minutes.
- Cook in a waffle iron for about 3 minutes until golden. Place on a rack and serve with powdered sugar, fruit, and toppings as desired.
